I have had so many requests for this recipe and people writing to tell me how much they loved it, that I thought I would share the recipe here.
Dadelkoek as we love to call it in South Africa. Moist Date and Orange cake with cinnamon whipped cream (my take on Dadelkoek).
After many requests for the recipe here it is. See my reel for step-by-step pics on instagram @thyme2travel. One of my followers who baked this wrote: “That orange sauce….it was decadent & smelt like Christmas, even tho’ there was no spice”…so this made me think that this might be a nice alternative to the usual Christmas cake.
Date and orange mixture to prep:
Bring the following to the boil:
100g chopped pitted dates
Juice of 1 & a half oranges
Rind of 1 orange (you will need about 2 ½ oranges in total)
Then add 3mls of bicarb & switch off the heat & allow to cool for approx 20 mins.
Whilst the above is cooling, make the cake mixture:
200g butter
175g castor sugar —cream together till light & fluffy
2 eggs -adding each egg, 1 at a time
1 teaspoon of vanilla -add in
Then Sieve:
200g flour
5mls baking powder
2.5mls bicarb (in addition to the 3mls above)
-sift & fold dry ingredients together into egg mixture, alternating with:
250 mls buttermilk
Fold in the cooled date and orange mixture.
Finally stir in the nuts:
100g chopped walnuts or pecan nuts
OVEN: 170°c for 50-70mins (I found an hour was about perfect in my oven but all ovens vary). Use a 23cm springform-cake tin lined with baking paper.
Make the syrup whilst the cake is baking.
Wait for about 8-10 minutes before spooning over this syrup:
Syrup (make whilst the cake is baking):
80mls orange juice
Rind of 1 orange
½ cup honey
30mls sherry (could otherwise use Brandy)
15-20g butter
1 teaspoon of vanilla
Stir and bring to the boil. Reduce the heat and reduce the mixture slightly. Switch off the heat, and add butter & vanilla.
I SERVED MINE WITH 250mls WHIPPED CREAM DUSTED WITH CINNAMON!! Enjoy
